SARASOTA, Fla. — Bella Vita Italian Kitchen in Sarasota showcases a cherished family recipe in the Chef’s Kitchen.
Owner Rocco Mosca’s recipes are inspired by his grandmother, Nonna Phyllis Scalzo.
Saltimbocca from Rocco Mosca’s Grandmother
Ingredients:
7-8 oz. chicken breast, pounded and thinly sliced
12 oz. chicken stock
1 tbsp. garlic
6 oz. white wine
4 oz. mushrooms, sliced
4 slices of tomato
4 oz. mozzarella
2 tsp. butter
1 tbsp. salt
1 tsp. pepper
2 tbsp. flour for dredging and thickening the sauce
Pasta of your choice
Directions:
Begin by heating oil in a saucepan, sufficient to cover the bottom.
Set the temperature high.
Dredge the pounded and thin chicken breast in flour.
Place the chicken in the saucepan.
Cook for one minute, then flip.
Add the mushrooms.
Incorporate chicken stock, wine, and garlic.
Allow to boil—then add butter.
Layer tomato slices over the chicken.
Follow with prosciutto and cheese.
Finish in the oven at 500 degrees, just long enough to melt the cheese and lightly crisp the prosciutto.
Serve over your preferred pasta.
